Zucchini Bread

Our garden explosion has made this recipe very useful...an original Magnusson favorite!

3 beaten eggs
1 cup oil (I do half oil/half applesauce for a healthier treat :-)
2 cups sugar
2 cups shredded zuchinni (a food processor really speeds this up!)
3 cups flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
2 tsp vanilla
1 cup walnuts (optional)

Mix eggs, oil, and sugar. Add dry ingredients, alternated with the squash. Add vanilla and nuts. Bake in greased and floured bread pans at 350 degrees for about 1 hour. Makes two bread loaves.
